I teach a course in MT once in a while at Stanford and I always include a
lecture or two on it in my introductory computatonal linguistics course.
Last year, for the first time, I got a system the French-English and
English-French versions of Systram for the PC under a deal that allowed me
to use them in their full form for a month. They were inaluable and I was
able to design some interesting exercises around them. I gather that Logos
had also made their stuff available for this kind of purpose. In the
course dedicated to MT, we have sometimes built a toy system of our own,
but we usually don't get it finished in the 10 weeks that Stanford allows
for a quarter.
